Abstract
Kluyveromyces genus is known to be one of the important yeast used in processes of industrial biotechnology. This importance is due to production of Lactase, key enzyme in dairy industries that catalyses hydrolysis of lactose in milk. But high concentration of carbon source which is lactose in most cases, causes crab-tree effect, a metabolic pathway that leads to more production of ethanol rather than lactase. In this research the main purpose was to control the initial lactose concentration in medium to prevent decrease in enzyme activity.
