Extraction of Anthocyanins and Total Phenolics from Dried Red Grape Skin by Super Heated Solvent and Production of NanoPparticle by Super Critical Fluid

  8. Red grape skin has a lot of antioxidant that called Anthocyanins. In this research this material has been studied and amount of extraction of them have been studied by changing the operational parameter and particle size in taguchi procedure. Pressurized liquid extraction (PLE) was used to extract Anthocyanins from Dried Red Grape Skin (DRGS) with acidified Ethanol solvent (1 %( v/v) of HCl) in 90-120°C, 10-40 bar, and 30 min extraction time. In this study, effect of particle size distribution of DRGS was considered and the results showed that with increasing the temperature (from 90 to 120 °C in 10 °C increments) and decreasing the pressure and particle size the extraction of Anthocyanins increased. The variables affecting the dynamics of the extraction of these compounds were studied. Identification and quantification of the extracted compounds was performed by GC- MS detectors. The optimal working conditions for total extraction of Anthocyanins were120°C, 10bar, 1410 of size and 12.5-15 min of extraction time. The use of supercritical fluids as anti solvent for the formation of micro- and nano-particles has become very popular over the past few years due to increased demands from industry for materials with high performance specifications and high or unique functionality. Supercritical fluids allow synthesis of many types of particles since the solvent’s chemical and physical properties can be varied with temperature or pressure, both of which can affect the degree of super- saturation yielding nucleation for crystallization. In this work Anthocyanins extracted from dried red grape skin by super heated ethanol, was used for GAS system with supercritical CO2. In this process, pressure is the most important parameter and it was selected in the range of 80-140bar (20 bar increment in each step). Finally it was observed that 5.4428 g/l of concentration ,140 bar of pressure 70˚C of temperature and 10 min residence time cause to production of lowest possible size of particle that is 630nm.
