  7. Abstract:
  8. Enzymes are biological catalysts that reduce the activation energy of a reaction in a short time and thus increase the speed of the reaction. The most common enzymes used in various industries, including the detergent industry, are lipases, amylases, celluloses, and proteases. Proteases are one of the most important industrial enzymes. The performance of enzymes is affected by the durability of their activity in long-term storage. Therefore, using a technique that can maintain the activity of enzymes, under storage and usage conditions, is an essential step in making a product containing enzymes. Stabilization-immobilization operation is one of the important downstream processes in maintaining enzyme activity. In recent research at the Enzyme Center, the stabilized enzyme liquid was stabilized on the proposed bed using a rotary dryer system and then dried in a fluidized bed dryer. The drying capacity of the rotary system is high and the cost and energy required are low, but the enzyme activity drops significantly in the granule processing stage. In the study of sources, the use of spray dryers has been confirmed in maintaining the quality of temperature-sensitive products. Therefore, in current research, in order to check the quality of the enzyme in the process of granulation and concentration, a spray dryer was used. The experimental results of the spray dryer showed that after concentration, the enzyme activity can be increased by1059.4% with only 50% concentration. The concentrated protease obtained from this step was stabilized on the proposed bed in a fluidized bed dryer. By examining the final activity of the produced granules, an optimal bed of calcium carbonate, sodium sulfate, FCC, and perlite has succeeded in providing 9 times more active granules than the sample produced in the rotating system and fluidized bed
