  8. Abundant lesions caused by many factors such as bread baking process, this is due to the heavy volume of liquidity in each year is wasted. Serious approach to the problem has not been provided. Thus the direction of a group of officials is to the replacement of voluminous bread instead of traditional bread. The problem of this approach is indeed erasing and eliminates the traditional bread basket of the consumer. The voluminous bread is a westerner product and thus, over time, in your own cooking technology is quite advanced. However, traditional bread product is completely Iranian and ancient and unfortunately, for various reasons, including the cost of bread, artisans desire to capitalize on the research and development of technology for the development of a traditional oven does not demonstrate. Thus, over time, technology of traditional oven has not transformed. It seems to be part of bread loss due to the lack of a serious change in technology of traditional bread and scientific work has not been done on it. In other words, the strategy of technology in this regard has not been designed since.Tafton bread has inherited a few thousand years ago and therefore it has the public acceptability of the Iranian people. Thus, this research aims to identify the sub-technologies into the oven of Tafton. Then they can be combined with other new technologies. Accordingly, this study is intended to correct only the cooking process until artisans to be able to manage innovation and technology of flat bread. So that the bread produced from this new technology, while being economical, the quality should be improved
